Bestie & her hubby came over & we sprayed the massive amount of canvas down with fire proofer stuff. So, now we’ll be in compliance with the CA Fire Marshal rules. That’s a good thing. 🙂
Of course… I didn’t get anything else accomplished today. My motivation has been shot lately.
I did make a really awesome recipe for dinner though. Swiss steak! It was REALLY nommy! Recipe is below.
Breakfast was coffee/milk.
Snack was an apple.
Lunch was shredded chicken/salsa over lettuce.
Dinner was Swiss steak & melba.
I did break down and have a small piece of cocoa-crack. Hopefully it won’t cause any issues tomorrow. 🙂
Water count: 100 oz
200g beef – round steak
320g sliced onion
3 oz sugar-free tomato paste (Contadina)
1/2 cup sugar-free chicken stock (Kirkland)
1/2-1 tsp ground black pepper
2 tsp minced garlic
1/4-1/2 tsp paprika
1/4-1/2 tsp sea salt
In a small crock pot, mix the tomato paste & chicken stock until smooth – add the spices & stir again.
Stir in the onion slices & beef (either in small ‘steaks’ or in strips).
Cook on High for 4 hours or cook on Low for 6-8 hours.

Per serving: 246.2 calories / 4.3 g fat / 24.3 g carb / 28.1 g protein
